Clean eggs and dairy are split into two distinct categories. The categories are fundamentally different from each other in terms of what they contain. There are plant-based egg and dairy products, and egg and dairy products made through cellular agriculture.
Plant-based egg and dairy products are made by combining ingredients that do not contain any animal products, and are derived from plant-based sources. Plant-based ingredients are combined in ways made to mimic the taste and texture of traditional egg and dairy products, or to create their own unique taste and texture profile that is marketed as a egg or dairy alternative.
Egg and dairy products are made through cellular agriculture by culturing microorganisms inside bioreactors with an adequate nutrient supply and waste disposal process. Microorganisms are often custom engineered using synthetic biology techniques to create metabolic pathways which produce a desired ingredient, such as a protein found in eggs or dairy. A bioreactor then is used to grow the custom engineered organism, or naturally occurring organism, to produce the desired final protein or other metabolic product.
